Quadrille- Birds and Heredity, etc.

I found Quadrille quite intriguing. One thing that got me thinking was the claim that birds choose beautiful objects like flowers, fruit, and feathers based on their heredity and physiology, thus asserting that these choices are mechanical. I cant help but wonder how our aesthetic choices/values are ingrained in heredity and physiology? Why is a colorful fresh flower such an appealing phenomenon cross species?
